We would like to introduce the case of JCHO Yugawara Hospital, which has implemented a new cook-chill system due to its relocation and new construction. The cook-chill system is a type of cooking and storage system that involves rapidly cooling food that has been heated to a core temperature of 75°C or higher, storing it in a chilled state (0-3°C), and then reheating it (to a core temperature of 75°C or higher) just in time for serving. After the implementation, patient satisfaction regarding meals significantly increased. Additionally, with the standardization of tasks, more time and effort could be dedicated to cooking.
